Sorghum
Products

Sorghum is a supergrass that is grown all over the world for its grains, dyes and juices.  In most parts of the planet, the grains are grown for human consumption or ground into flour.  In the US, the grains have been called Milo and been used primarily for animal forage, but they have a growing fanbase among people looking for vegetarian or gluten free food options.  The grains have a nutty flavor that can be used in lieu of quinoa, oats or couscous.

In the South, sorghum is most well known for syrup.  The stalks, which grow upwards to 17 feet tall, can be crushed to provide a neon green juice that’s filled with sugars.  These juices are boiled down to a dark brown syrup (some people call it molasses) that can be served on biscuits, mixed into foods as a sweetener or used as a glaze on meats.  The variety we use is an heirloom seed called “William.”  We also grow a mixed color broom variety for crafts.

Gourmet
Mushrooms

Mushrooms are a world of their own—both delicate and determined. At Found Fork Farm, we grow a wide range of gourmet varieties including Lion’s Mane, several types of Oyster, Shiitake, and Reishi. Each one brings its own texture, flavor, and character to the table—from the meaty chew of Shiitake to the mild, crab-like sweetness of Lion’s Mane.

Our cultivation methods are just as diverse as the mushrooms themselves. Some are grown on indoor blocks where temperature and humidity are carefully balanced. Others live outdoors in shaded beds or on inoculated logs, doing what mushrooms do best—transforming simple ingredients into something remarkable.

We don’t forage or dabble in anything psychedelic; everything we offer is cultivated right here with care, patience, and a bit of curiosity. The result is a collection of mushrooms that are as beautiful to grow as they are to eat.
